Penticton, B.C. - The wait is over. Evolve Sparkling House, the newest dedicated sparkling winery in the Okanagan, is thrilled to announce its grand opening on July 23, 2025.
Just minutes from downtown Penticton, at the start of the Naramata Bench, Evolve overlooks the Kettle Valley Rail Trail, Hoodoos, and shimmering Okanagan Lake. More than a winery, Evolve Sparkling House is a tribute to life’s everyday celebrations and a joyful invitation to wine lovers everywhere to sparkle their own way.
As excitement bubbles over, so does recognition. At the 2025 All Canadian Wine Championships, Evolve was named Canada’s Top Sparkling Producer, with its 2018 Brut Nature awarded Best in Category, officially earning the title of Canada’s Best Sparkling Wine of the Year

Ron and Shelley Mayert, co-founders and the heart behind the winery’s vision, bring a deep connection to British Columbia.
“I was born and raised in Summerland, in the heart of the Okanagan Valley,” says Ron Mayert. “Shelley, my wife, grew up on a farm in the Fraser Valley. Our strong BC roots, belief in the region’s potential to grow world-class fruit, and desire to give back to the communities that shaped our lives are at the core of our unique winery concept.”

Evolve’s portfolio is rooted in Methode Traditionnelle techniques, small-batch production, with a commitment to quality, launching with five carefully crafted sparkling wines and expanding to eight as new cuvées debut throughout the year. The team at Evolve deeply believes this region is perfect for growing grapes used in sparkling wine. Situated at the same latitude as France’s iconic Champagne region, the Okanagan Valley provides ideal conditions for growing traditional sparkling varieties, and it shows. Evolve’s wines have already earned impressive accolades:

At Evolve Sparkling House, every tasting is a chance to relax, connect, and discover bubbles that speak to individual tastes. Guests can select from three distinct experiences:
Splash + Dash: A quick, 30-minute tasting featuring three Evolve favourites. Ideal for adding a bit of sparkle without slowing down. $13 per person. Reserve here.
Flight Mode: A leisurely, 45-minute curated flight of four wines, choose an all-sparkling lineup or a mix of sparkling and still wines. $25 per person (includes a $10 wine purchase credit). Reserve here.
Bubbles + Bites: A one-hour guided experience featuring five wines paired with artful amuse-bouche bites from OROLO Restaurant + Cocktail Bar, perfect for special moments or curious palates. $55 per person. Reserve here.

Behind every bottle is the talent and vision of the winemaking team led by winemaker Lynzee Schatz, a rising star in the world of sparkling wine. After honing her sparkling craft at Chandon for five years in Australia’s Yarra Valley, Lynzee brings her passion for traditional methods and innovative flair back home to the Okanagan. Her work is redefining what BC bubbles can be - approachable, expressive, and unmistakably world-class.
“Sparkling wine has been my passion since I entered the wine industry over 20 years ago,” says Winemaker Lynzee Schatz. “So, being recognized for Canada’s Best Sparkling Wine of the Year as well as receiving an international award for a wine that stood shoulder-to-shoulder with Champagnes and some of the world’s best sparkling wines is incredibly special to us.”
